Cuisine

The Grand Dining Room
The Grand Dining Room is a study in stateliness, a tribute to the spirit of Europe's marquee 5-star hotel restaurants that inspired its dignified yet convivial ambiance. Handsomely decorated in rich woods, designer tapestry fabrics and oversized armchairs, the expansive dining area exudes classic splendor. Tables are beautifully set with bone china, sparkling Riedel crystal, gleaming silver, and fine cotton linens. Remarkably, as sumptuous as The Grand Dining Room's decor is, guests always feel completely at ease within its grandeur. Much of that is a direct reflection of the formally attired and classically trained wait staff, graciously serving course after course of European-inspired cuisine or delectable alternatives such as light and healthy Canyon Ranch Spa Cuisine and gourmet vegan options. And on board Regatta, Insignia, Nautica and Sirena signature specials from Jacques and Red Ginger are featured nightly in The Grand Dining Room. As variety is essential, menus change daily with a brilliant choice of at least ten appetizers, soups and salads and twelve entrees at dinner.

Polo Grill
Polo Grill embodies all the elements of a classic steakhouse, expressing them with timeless reverence. Mindful of tradition, the decor features crisp, white linen tablecloths, dark wood furnishings and supple, high-back, burgundy leather chairs. Each course stands as the very definition of time-honored favorites, most notably the beef dishes, all of which are USDA Prime and dry-aged for 28 days to enhance tenderness and flavor. Succulent seafood dishes such as Grilled Swordfish and Whole Maine Lobster Gratinee are also classics in their own right. The Classic Caesar Salad, too, is prepared according to tradition, tableside and with gusto.

Open for dinner only. Reservations required. Toscana on Oceania Cruises.

Toscana
In Italian, Toscana means Tuscan, and just as Tuscan cuisine evolved from rich family traditions, many of our recipes originated with the mothers and grandmothers of our own Italian culinary staff. Presented on elegant, custom-designed Versace china, masterfully prepared dishes exemplify the essence of Tuscany and celebrate Italy's culinary passion. Perhaps the evening begins with an appetizer of Octopus Carpaccio with Champagne Vinaigrette or the Artichoke and Parmesan Cheese Timbale with Black Truffle Sauce. Classic dishes from other regions of Northern Italy are featured as well, such as the Minestrone alla Genovese, Lasagne al Forno alla Bolognese and Osso Buco alla Milanese.

Open for dinner only. Reservations required.

Jacques
Exquisitely decorated with heirloom antiques, pickled wood furnishings and art from Jacques Pepin's personal collection, Jacques was modeled after a Parisian bistro. Comfortable and eclectic, the ambiance is pure French, as is the cosmopolitan yet wonderfully embraceable cuisine. Luscious aromas waft from the gleaming show rotisserie, where chicken, duck, pork, beef and veal roasts slowly turn. Each dish is a classic, ingeniously reinterpreted by Master Chef Pepin. This is Coq au Vin beyond the imagination. Rotisserie-roasted chicken falls off the bone, bursting with flavor. His Steak Frites pairs the succulence of prime beef with the crisp sweetness of pommes de terre. Jacques is absolutely magnifique!

Open for dinner only. Reservations required.

Red Ginger
Red Ginger's chefs have created contemporary interpretations of Asian classics. The interior simply glows with ebony woods, a soothing waterfall wall and striking, modern Asian artworks. Manila, Philippines
City Manila

Bustling Manila is the second largest city in Southeast Asia, with its towering skyscrapers and remarkable joie de vivre. Yet amid the big-city turmoil are oases of calm: lush tropical parks, magnificent cathedrals, dramatic Spanish forts. Choose from the cultural riches of the Metropolitan Museum and the Cultural Center of the Philippines. Intramuros, Manila's famous walled city, was founded by the Spanish in the 16th century. A "must see" is the Malacanang Palace with its opulent displays of Ferdinand and Imelda's decadent indulgences.

Hue, Vietnam
City Hue

In 1744, Southern Vietnam was controlled under the control of Nguyen. At this point in history, Hue resided as capitol of Vietnam. When the control of the city was taken away from the rebels with the defeat by Nguyen Ann in 1802, The Nguyen family dynasty began. During the resignation of the last emperor in 1945, this ended the dynasty of the Nguyen Family. Regardless of the damages as a result of the 1968 Tet offensive that occurred during the American War, this beautiful city it still entails architectural findings.

Through all of the damages due to natural disasters and wars, Hue sustained its ancient appearance. This ancient capital contains palaces, walls, and royal tombs. Considering the history and heritage that Hue contains, makes it Vietnam's most priceless possession. On December 11, 1993, Hue was appointed the status of being a World Culture Heritage by UNESCO's Director General, Federico Mayor.

One of Hue's main attractions would be the Citadel, which is constructed around the natural beauties just north of the Perfume River. The construction of this structure was built from 1805 to 1832. This structure has a circumference of 10,000 m, a height of 6.6 m and a thickness of about 21cm. It contains a dirt filled center and an outer layer of bricks. The Citadel is positioned just southeast of Mount Ngu Binh (Royal Screen Mount) and within a view point of the Ta Thanh Long (Left Green Dragon) and Huu Bach Ho (Right White Tiger).

Along with the Citadel, Hue also possesses structures as the Ngo Mon, which was built in 1833, The Palace of Supreme Harmony, and Royal Tombs. All of these magnificent works of art can be view upon your visit. We'll reserve all of the details of these architectures for your viewing pleasure.

Nha Trang, Vietnam
City Nha Trang

If you were traveling by plane to Nha Trang, this city would give the illusion that it is engulfed by beautiful elevated mountains glazed of green grass with this ideal relaxing city in between. Most of the Vietnamese come to Nha Trang to escape the hectic ways of Ho Chi Minh City. This ideal paradise island is known for its beautiful beaches with the atmosphere of warm temperature all year round. A couple of Nha Trang's famous islands include Hon Tre, Hon Yen, Hon Rua, and Spratly islands.

The city of Nha Trang contains the most beautiful beaches. Once of which is Cana beach which is a stretch of what sands and a couple restaurants that allure travelers. The Natives and visitors make a habit of indulging in the beach atmosphere mainly during the times of 5am - 8am when weather is cool instead of steaming hot. One of its extraordinary features would be the Thanh Long (Green Dragon fruit) orchards. These orchards only grow along the highway to Nha Trang and have grown quite popular.

Saigon, Vietnam
City Saigon

Unfortunately Saigon was unable to escape war since the beginning. Saigon suffered a disturbing record in terms of damages due to the war. The southern area of Saigon was appointed districts and government during 1698 by Mr. Nguyen Huu Canh under the order of Lord Nguyen Phuc Chu. Also in 1698, the city of Saigon was officially named. In the year 1772, the city of Saigon began to form starting with the streets being converted from canals.

The city of Saigon is equipped with plenty of sites to allure its visitors as well as its life long natives.
